Our oil mill
Equipped with state-of-the-art machinery, nothing is left to chance: the olives, a few hours after harvesting, separated from branches and leaves, are carefully washed and dried. In the crushing or pitting stages and subsequent gramation, temperature control, reduced air presence and low processing times avoid undesirable oxidation and heating processes of the olive paste.
A two-stage decanter provides for the extraction of the precious olive juice, preserving its best organoleptic characteristics. All our oils are filtered and stored in stainless steel containers under nitrogen in air-conditioned rooms.
